vanguard of Basque cuisine. You
could say that Mugaritz is more
than just a restaurant. Its ideas
around cuisine and the elaboration
of dishes create a philosphy where
new creations and techniques are
used to constantly discover new
flavours. Different combinations
of herbs and spices are used in
all of the dishes.
