The Kabuki restaurant
is located in the North
of Madrid. It is decorated
in a minimalist style
and is one of the best
Japanese restaurants
in the capital. Similar
to Ars
Vivendi, the
restaurant is run by
a Spaniard, Ricardo
Sanz de Castro, with
Nipponese influences
from Tokyo Taro, but
with some Spanish touches
(he has also worked
for Restaurante
Nodo).
Ricardo is an expert
in preparing fish dishes
and is well known for
his originality and
application of new techniques.
He pays great attention
to creativity and textures
in his recipes. His
cuisine integrates olive
oil and Japanese flavours
inherited from and Masao
Kikuchi (today in
Marbella). Little by
little he has gained
many fans of his dishes
such as 'hígado
de rape macerado',
'la hijada de atún'
or 'los langostinos
con copos de maíz'.
He prepares exotic dishes
such as 'el Pez mantequilla
con paté de trufa',
'aceite de setas'
or 'cebolleta con
caviar de arenque
y nabo amarillo'.
Sanz also prepares
his meat dishes creatively.
On the set menu there
are many types of Spanish
meat to try such as
pork from Huelva, ox
from Esla de León,
young deer and exotic
meats such as bison
from Canada, ox from
Waygu, New Zealand,
duck from Colber etc...
A varied selection
of very acceptable wines.
Efficient service. Prices
tend to be high. A very
popular restaurant.
