Spanish traditional recipe: Grilled sardines

Many people relate the smell of grilling sardines with Spain. Delicious on a hot Summers day, done outside over a barbecue and eaten with a cool beer.
Basic ingredients:


  • 12 sardines (serves 4)
  • salt
Steps to making spanish grilled sardines:

 







 
 




 







 

 





 
 


1. Remove the scales from the sardines and season with salt (you don´t need to remove the heads or guts)

2. Heat a griddle pan and place the sardines on it when hot

3. The sardines will need about 2 mins on each side

4. Serve with a chunk of white bread

 

Tips and Ideas:

  • You can also cook the sardines over a barbeque following the above recipe. If you don't want your kitchen to smell of sardines for hours afterwards, we recommend outdoor cooking
  • Encourage your guests to eat the sardines with their fingers. For some reason they are much more satisfying that way. Provide bowls with warm water and lemon slices in for people to wash their fingers in afterwards. Guarenteed to get the fishy smell off hands.
  • Make sure the griddle is very very hot before starting to grill the sardines. Use coarse salt if you can.
