Basic ingredients

• 300g green olives
• 1 tbsp chopped fresh parsley

• 2 cloves garlic
• olive oil

Steps:

1. Crush the olives (you don´t need to remove the stones) by bashing them with a rolling pin

2. Place the olives, crushed garlic cloves and chopped parsley in a glass jar and pour over some olive oil (about 2 tbsp) - shake all ingredients together keep in the fridge before serving

Tips and ideas:

• Serve a plate of these olives and some fried salted almonds with a very cold lager beer or a cool white wine for a refreshing and irresistible aperitive.
