1. Put the onion and crushed garlic in a large pan and cook slowly over a low
heat for 5 mins
2. Add the squid (in strips) and the glass of white
wine and boil for 15 - 20 mins over a medium heat
3. Slice the potatoes
(about 1cm in thickness) and fry them separately for 2 mins only
4. Add the fried potatoes to the pan and leave the mixture to boil until the squid
is soft and the potatoes cooked
5. Season with salt and pepper
6. Place the mixture in a preheated serving dish and garnish with parsley
- Be careful when cleaning the squid. It can be quite
a messy business.
- Use fresh squid. Frozen squid tends to be rubbery and
lacks flavour.
- Serve this dish with a tasty pepper salad and a chilled
dry white wine.
