SPANISH CHRISTMAS RECIPE

Turron (nougat)
Turron is the Spanish word for nougat, made with honey and almonds. Spanish homes will usually have a plate full of different turrons and sweatmeats on a table in the sitting room throughout the Christmas period. You can buy all sorts of varities and flavours. This is the original variety, as bought to Spain by the Arabs during the Moors occupation of this country.. And it is much much nicer than the sticky white or pink nougat sold in shops outside Spain.

Spanish recipes

Basic ingredients:

  • 1 kilo of honey
  • 500g sugar
  • 2 egg whites

 

  • 1 1/2 kilos ground almonds
  • 1 lemon

Steps:

1. Heat the honey in a pan over a low heat

2. Add the sugar to the pan and stir using a wooden spoon

3. Beat the egg white until stiff and add to the honey and sugar mixture in the pan remove from the heat and stir for 8 - 12 mins before placing the pan once again over a low heat. Continue stirring until the mixture begins to caramelize (it will turn brown)

4. Add the ground almonds together with the zest of the lemon - mix everything together and then set aside to cool for a few mins

5. Put the mixture into a metal tin lined with grease proof paper - set aside to cool for 2 hours

6. Once it has completely cooled it is ready to eat - if you want to store it use an airtight container.
