called 'Beotibar', Roberto Ruiz, head chef, offers us some up to the minute recipes
based on the best local produce available. Chilli peppers from nearby Ibarra,
peppers from Guernika, Basque tomatoes, meat and milk from small local producers
are just some of the products that end up in his restaurant's kitchen. One
speciality is black beans from Tolosa, well known throughout Guipuzcoa as the
best, and cooked to perfection by Roberto Ruiz. But Roberto Ruiz is also
responsible for some much more sophisticated dishes which have gained praise from
a number of experts. The restaurant has a very good, modern wine list with
a great selection of wines to choose from. |
