Sebastian, recommended without reservation. José Juan Castillo has been
famous for his innovative and delicious creations since 1986. Torre D'Argent (Paris)
and el Jokey de Cortés (Madrid) were where he started out but now he is
one of the top Basque chefs of his time. Specialities include courgette
in puff pastry with foie-gras and monkfish in baby squid sauce...plus many more. Set
in elegant rooms, his wife Ana María Ezcay also works in the restaurant
helping to create a friendly atmosphere. A classic which is definitely worth
