restaurant has spent 40 years at the head of the list of the capital's best restaurants,
according to some with French influences and according to others Spanish influences.
Many have been suprised by the magic of this restaurant, even Paul Bocouse. Similar
to Horcher the menu continues to be quite conventional something which pleases
some but attracts criticism from others. Quality and unquestionable professionality
have made this one of the best restaurants in the country not to mention the use
of only the best ingredients. Esteban Sánchez continues to be
in charge of the kitchen. His most recognised contribution being his excellent
use of game in many dishes which are all expertly prepared. However his conservative
