Spanish traditional recipe: Pork fillets with sherry

Basic ingredients:


  • 2 large pork fillets or 4 small ones
  • 50g serrano ham or bacon
  • 2 tbsp olive oil
  • 1 large onion
  • 100ml dry sherry
  • 1 tsp thyme
  • 6 cloves of garlic
Steps to making pork fillets with sherry:

 







 
 




 







 

 





 
 


1. Heat the oil in a strong based frying pan then add the fillets and brown on both sides

2. Roughly chop the onion and serrano ham, peel the garlic cloves then add to the pan together with the sherry and thyme

3. Cook over a medium heat stirring the mixture occasionally until the meat is done (approx 30 mins)

 

Tips and ideas:

  • Serve with chunks of warm bread and summer vegetables
  • Make sure you buy good quality pork fillets and try to turn them over just once when they are browning. This helps to lock their flavour.
