1. Wash then cut the aubergine and peppers in half
2. Cut the
onion into quarters and wash the tomatoes
3. Place everything in
a roasting tin and sprinkle over 2 tbsp olive oil
4. Roast the vegetables
in a preheated oven ( 180 degrees) for about 20 mins then remove from the oven
and set aside to cool
5. Meanwhile cut the serrano ham into small
pieces and lightly fry for a few mins then set aside
6. When the
vegetables have cooled remove the skin and cut into small pieces then place everything
together in a bowl add a little more olive oil if necessary then add the lemon
juice - season with salt and pepper
7. Finally mix in the serrano
ham. Serve cold.

a
tapas, this dish makes an excellent side dish
with any any of these
fish dishes.
- Vegetarians
can make this dish and just leave out the ham. It is still delicious.
- Vary
the vegetables according to what season you are in. Sweet potatoes roast nicely,
as do leeks, garlics, small carrots, green peppers.......
