SPANISH TAPAS RECIPE:

Scrambled eggs with bacon and sausage
Scrambled eggs (huevos revueltos) is a traditional starter in Spain and Spaniards use all kinds of ingredients to give it extra flavour - asparagus, spinach, serrano ham.. This recipe uses bacon and spicy chorizo sausage.

Spanish recipes

Basic ingredients:

  • 50g bacon
  • 50g chorizo sausage
  • 1 tbsp olive oil
  • 4 eggs
  • 2 tbsp milk
  • salt and pepper

Steps:

1. Cut the bacon into small pieces and do the same with the chorizo (remove the casing first)

2. Fry the bacon and sausage in a little oil

3. Beat the eggs together with the milk and season with salt and pepper add to the frying pan and stir everything together until the eggs are ready then serve with some fresh bread

 

Tips and ideas:

  • Experiment with different ingredients. For vegetarian scrambled eggs use mushrooms, asparagus, cheese, spring onions...
  • One Spanish restaurant we like offers huevos revueltos with king prawns and serrano ham. A strange combination which is actually delicious.
  • Use free range eggs if you can.
