Fried
anchovies Even if you are not a great fan of tinned
anchovies, if you enjoy fresh fish you will love the flavour of fried anchovies.
This tapas is especially popular in Northern Spain, Cantabria and Cataluña.
Basic
ingredients:
1/2 kg fresh anchovies
flour
2 eggs (beaten)
olive oil
Steps:
1. Gut
the anchovies and remove the heads then split them lengthways and remove the backbone
- wash them under a running tap and drain well
2. Season
with salt
3. Dip them in the flour and beaten egg and fry
them in hot oil very quickly making sure that they don´t burn

Serve immmediately

with lemon wedges and/or garlic mayonnaise
Accompany with
freezing cold lager or crisp white wine
With a green salad, this tapas
can make a delicious lunch
Open the windows while you are cooking if you
don't have a fan over the stove to stop the kitchen from getting smelly.
