Spanish tapas recipe: Fried aubergines

Basic ingredients:

  • 1 medium aubergine
  • 1 egg
  • a few slices of serrano ham (optional)
  • 3 tbsp flour
  • salt
  • olive oil
Steps to making Spanish fried aubergines:

 







 
 



 





 

 





 
 


1. Slice the aubergine (about 1 cm thick)

2. Beat the egg add a couple of pinches of salt and set aside in a bowl

3. Put the flour on a large plate

4. Heat the oil in a frying pan over a medium heat

5. Take each aubergine slice and dip in the egg then the flour

6. Fry immediately for about 3 - 5 mins turning once when the slices have turned golden brown on each side remove from the frying pan and drain off excess oil by placing them on kitchen paper on a plate before serving

 

Tips and Ideas:

In the Basque Country the aubergine slices are eaten as pinchos placed on small pieces of crusty white bread often with a piece of serrano ham on top secured in place by a cocktail stick
