Spanish traditional recipe: Lemon and chicken roast

This Spanish roasted chicken dish has a tangy lemon flavour and makes a change to traditional chicken roasts.
Basic ingredients:

  • 1 medium sized whole chicken
  • a chunk of bread from the day before
  • 4 cloves of garlic
  • 2 large potatoes
  • 1 whole lemon plus juice of one lemon
  • olive oil
  • 200ml white wine
  • 100ml water
  • salt and pepper

1. Prepare the chicken for roasting place it in a roasting tin and season with salt and pepper

2. Rub one whole garlic clove over the chunk of bread and place inside the chicken

3. Cut the whole lemon into quarters and also place inside the chicken then pour a generous amount of olive oil over the chicken

4. Peel and cut the potaotoes before placing them in the roasting tin around the chicken also put the whole garlic cloves (without peeling) in the tin

5. Pour the lemon juice and water over everything and place in the oven at 200 degrees

6. While roasting, open the oven and baste the chicken and potatoes several times

7. After an hour, pour the white wine over the chicken and then return to the oven to roast for another 15 minutes.

 

Tips and ideas:

  • Remember to preheat the oven before roasting the chicken
  • Make sure the chicken is properly cooked by piercing with a skewer or fork before taking it out of the oven.
  • Serve with a green leafy salad and a bottle of rioja wine or sangría.
