Steps:
1. Sift
the flour and then add to the milk along with 25g sugar, the eggs and a pinch
of salt
2. Melt 50g butter and add to the mixture beat all the ingredients
together until you achieve a smooth batter
3. Meanwhile heat a frying
pan with a little butter then pour a small amount of the batter (about 2 tbsp
or just enough to cover the base) into the pan and cook until browned on one side
then flip and cook on the other side repeat this process until all the mixture
has been used up - set the pancakes aside on a plate
4. For the
sauce melt 50g sugar and 50g butter in a pan - add the orange rind and allow to
caramelise (be careful it doesn´t burn at this point)
5. Then
add the brandy and orange juice and continue heating to reduce the sauce a little
6. Dip the pancakes in the sauce, fold in quarters and arrange on
a large plate and pour any excess sauce around the edges
7. Serve
